Not long after accepting the position of Sous Chef at Frasca, Justin learned of the opportunity to head the team at Meander Riverside Eatery here in Pagosa Springs. He built relationships with farmers that fed his knowledge and sparked a passion for creating a high-quality and sustainable culinary experience. The three years Justin spent at The Plimoth contributed to his love for creating a new weekly menu that corresponds with what was available at the farmer’s market. The Plimoth is where Justin worked with side by side with Executive Chef Charles MacDonald, and also where he was reunited with Chef Peter Ryan, his former Chef Director at Cook Street. He began at the Hyatt Regency and worked his way up to positions as Sous Chef in three different establishments: Charcoal Restaurant, The Plimoth and most recently, internationally revered Frasca Food and Wine in Boulder. He completed his education at Cook Street School of Culinary Arts in 2012 and spent the next 9 years building his career on Denver’s Front Range. Justin began his culinary career not long after moving to Colorado from his small Indiana hometown in 2011.
